The process begins with sourcing fresh cassava roots from local farmers, especially in regions like Kwale County. Only mature, healthy cassava roots are selected to guarantee high starch content and superior product quality.
Once harvested, the cassava roots are thoroughly cleaned and peeled to remove dirt, soil, and the outer skin. This step is critical in ensuring the final product is clean and safe for consumption and industrial use.
After peeling, the cassava is washed again and grated or crushed into a fine mash. This helps break down the roots and release the starch content. The mash is then processed using clean water to separate the starch or prepared directly for flour production.
For cassava flour, the wet mash is dewatered and dried using controlled drying methods to preserve nutrients and prevent contamination. Once fully dried, it is finely milled into a smooth powder and sieved to achieve a consistent texture.
For cassava starch, the extracted liquid is allowed to settle so that pure starch can be separated. It is then washed repeatedly to remove impurities before being dried into a fine, high-purity starch powder.
Finally, both cassava flour and starch undergo strict quality control checks to ensure they meet food-grade and industrial standards. They are then carefully packaged to maintain freshness and quality.
